  13. Take 1 cup Vinegar
  14. Prepare 2 cups Mustard oil
  15. Take 10 Cloves
  16. Prepare 20 gms Methi seeds or fenugreek seeds

Dry roast sesame and mustard seeds. Cool then and grind in a grinder to a coarse powder. Green Chilli Pickle : Spicy but obvious, Sour and Sweet to balance it all! Sliced green chillies in a spiced jaggery & tamarind syrup.

  1. Wash and dry green chillies, give a slit in between.
  2. Coarsly grind aniseed, black pepper, cloves, mustard seeds and fenugreek seeds.
  3. Roast cumin seeds and grind it.
  4. Mix all the above-mentioned spices.
  5. Heat oil in a pan to smocking point, low down the flame, add green chillies and fry them for few minutes or till the texture changes. Remove from fire and let it cool. Add all the spices and mix well.
  6. In a pan add gur or jaggery in vinegar and cook till the gur dissolves properly. Cool it and strain it, add to the pickle and mix it.
  7. Store in clean airtight jar. It's ready to eat after few hours.
  8. Ready to serve and ENJOY!
