And while the whole nasi lemak ensemble is a treat indeed, the one thing that I consider a must have is nasi lemak sambal that comes with it.

Steps to make Nasi Lemak Sambal:
- Deep fried half bowl of anchovies, set aside and keep the oil for later.
- Blend half bowl of the anchovies and shallots into paste.
- In a big pot, add cooking oil and once it's hot enough, then add the paste.
- Stir and mix. Cook for about 10 mins or so. Add 1 tsp tamarind paste Followed by pandan leaves.
- Add gula melaka, mix well.
- Once it's boiling. blend garlic, red chilies into paste and add them into the pot.
- Mix and add the rest of anchovies into the pot. cook and stir for 5 mins.
- Add stock cube and 1 tsp of salt. cook for a min.
- Add onions in.
- Add 1/4 cup of water in cook for 10 mins.
- Add 1 tbsp white sugar and then 1/4 cup of water, keep stiring and cook.
- Add the anchovies oil in if the sauce is too dry.
- Serve.
- Ready to serve and ENJOY!
