The ingredients needed to make Sambal Ijo (Green Sambal):
  1. Make ready large green chilies, remove the stalks
  2. Get green chilies (deepen on your spicy level)
  3. Prepare green tomatoes
  4. Take large shallots
  5. Take garlic
  6. Take cooking oil, for frying
  7. Get lime juice
  8. Make ready Salt and sugar to taste

Instructions to make Sambal Ijo (Green Sambal):
  1. Roughly chop green chilies and green bird's eye chilies
  2. Steamed green chilies and green birds eye chilies together with shallots, tomatoes and garlic for 6 minutes.  Remove and drain. If it's wilted, mash the ingredients above roughly (I use a food processor). Make sure all the ingredients are well blended.
  3. Prepare cooking oil and heat the skillet, then saute all ingredients until fragrant and smells good. Finally, add sugar, lemon juice and salt to the stir fry, then mix well.  Continue to cook until it is completely cooked.
  4. Remove the chili sauce, serve with other side dish you like.
  5. Note: tomatoes can be steamed or can be sauteed directly with chilies that have been mashed coarsely.
  6. Ready to serve and ENJOY!

If you like your sambal crazy hot, add more chilli padi. You can use red or green chilli padi. I like to use red as it gives a few red speckles in my sambal. If you like your sambal mild, remove the chilli seeds. There is no need to add any souring agent such as lime or tamarind as the sourness comes from the green tomatoes.
