  10. Prepare spicy sauce (sambal sauce)

Add onions, tomatoes, tamarind, sugar, salt to taste. Cover, reduce heat to med, simmer till tomatoes are well stewed [mash with spatula] and sauce thickens. Add prawns, stir-fry until just opaque - do not overcook! Dissolve tamarind paste in hot water.

  2. Used leftover white rice or cooked rice then set aside
  3. in pan with oil brown onion and carrot then add prawn sautee for 2 minute then add sambal sauce with light soy sauce and sugar sautee for another 1 minute
  4. Add cooked white rice and stir fry all in a pan for another 3 minute to mix well then off heat and serve
  5. Ready to serve and ENJOY!

Add prawns, stir-fry until just opaque - do not overcook! Dissolve tamarind paste in hot water. Slice lower third of lemongrass stalk into fine rings. Add minced fresh chilies, small dried chilies, onion, galangal, lemongrass, cloves, garlic, and shrimp paste to a food processor. Add water and blend until smooth.
