In a nonstick Dutch oven, heat oil over medium heat. Stir in beans, tomatoes, coffee, honey, salt and pepper. In a large heavy bottom pot over medium-high heat, heat the olive oil. Add the red onions, sweet potatoes, bell pepper and garlic, season with salt and pepper.

- Chop the spring onion into small pieces, separating the white end from the green end. Grate the sweet potato. Chop the pepper in small pieces.
- Heat some oil in a pan over a medium heat and add the garlic, chilli powder, paprika, cumin seeds and white ends of the spring onion. Fry for a short time, ensuring not to burn the garlic.
- Add the pepper, sweet potato, chopped tomatoes, black beans and 400ml of water to the pan. Bring to the boil and simmer (with a lid) for 20 minutes
- After 20 minutes, remove the lid, add the rest of the spring onion, salt, pepper and the juice of one lime. Continue to simmer for 5 minutes without the lid.
- Sprinkle with coarsely chopped coriander and serve with rice, nachos or wraps. Sour cream and guacamole are always nice additions also.
