Simmer: Bring chili to a boil and then reduce heat to low. Add corn, kidney beans, pinto beans, diced tomatoes, water, brown sugar, chili seasoning mix, and mustard to the pot. In a large pot over medium heat, heat oil. Transfer to the soup pot, and drain and discard grease from the frying pan.

Steps to make Beef Chili:
  1. Wash and rinse beans separately. Soak them overnight.
  2. Boil beans until cooked but firm. Save 3/4 cup of each cooking water.
  3. In a Dutch oven sauté onion for 5 minutes. Add garlic and cook for 2 minutes.
  4. Add herbs, spices and tomato paste. Cook for 1 minute, stirring constantly.
  5. Add beef and cook, breaking lumps, until there’s no more pink/red meat.
  6. Add tomato sauce, both cooking waters, beans and salt. Bring to a boil, then lower heat to a low and simmer for 30 minutes.
  7. Turn off heat. Add cilantro, stir and let it sit for a few minutes before serving. Serve with hot pepper sauce, a scoop of sour cream, shredded Cheddar and/or tortilla chips if desired.
  8. Ready to serve and ENJOY!
